Ingredients:
Salad:
3 cups Water
1 cup Lentils (Uncooked)
1 Seeded Cucumber (Cut Into Fine Pieces)
1 Small Red Onion (Minced)
¾ cup Mint Leaves (Diced)
½ cup Sun-Dried Tomatoes (Finely Chopped)
Dressing:
3 tbsp Olive Oil
2 tbsp Fresh Lemon Juice
1 tsp Garlic (Minced)
1 tsp Dijon Mustard
Pinch Of Salt And Pepper
Directions:
Step 1. Add the water and lentils in a saucepan.
Step 2. Bring to a boil then reduce to a simmer. Cook for 20-25 minutes.
Step 3. Drain and rinse the lentils. (rinse in cold water) Transfer the lentils in a bowl.
Step 4. Put them in the refrigerator to chill for an hour.
Step 5. Add the lentils, cucumber, onion, mint leavers, and dried tomatoes in a large bowl. Mix well. Set aside.
Sauce:
Step 1. Whisk the olive oil, lemon juice, garlic, mustard, salt, and pepper in a small bowl.
Step 2. Pour the sauce over the salad. Stir to mix.
