- 3 cups Water
- 1 cup Lentils Uncooked
- 1 Seeded Cucumber Cut Into Fine Pieces
- 1 Small Red Onion Minced
- ¾ cup Mint Leaves Diced
- ½ cup Sun-Dried Tomatoes Finely Chopped
Dressing:
- 3 tbsp Olive Oil
- 2 tbsp Fresh Lemon Juice
- 1 tsp Garlic Minced
- 1 tsp Dijon Mustard
- Pinch Of Salt And Pepper
Add the water and lentils in a saucepan.
Bring to a boil then reduce to a simmer. Cook for 20-25 minutes.
Drain and rinse the lentils. (rinse in cold water) Transfer the lentils in a bowl.
Put them in the refrigerator to chill for an hour.
Add the lentils, cucumber, onion, mint leavers, and dried tomatoes in a large bowl. Mix well. Set aside.
Sauce:
Whisk the olive oil, lemon juice, garlic, mustard, salt and pepper in a small bowl.
Pour the sauce over the salad. Stir to mix.
