Ingredients
  

  • 3 cups Water
  • 1 cup Lentils Uncooked
  • 1 Seeded Cucumber Cut Into Fine Pieces
  • 1 Small Red Onion Minced
  • ¾ cup Mint Leaves Diced
  • ½ cup Sun-Dried Tomatoes Finely Chopped

Dressing:

  • 3 tbsp Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tsp Garlic Minced
  • 1 tsp Dijon Mustard
  • Pinch Of Salt And Pepper

Instructions
 

  • Add the water and lentils in a saucepan.
  • Bring to a boil then reduce to a simmer. Cook for 20-25 minutes.
  • Drain and rinse the lentils. (rinse in cold water) Transfer the lentils in a bowl.
  • Put them in the refrigerator to chill for an hour.
  • Add the lentils, cucumber, onion, mint leavers, and dried tomatoes in a large bowl. Mix well. Set aside.

Sauce:

  • Whisk the olive oil, lemon juice, garlic, mustard, salt and pepper in a small bowl.
  • Pour the sauce over the salad. Stir to mix.
