I’m a big fan of savory breakfasts and this Weight Watchers Crustless Spinach, Onion, and Feta Quiche might be your new favorite. It is a so easy to make… plus, it reheats well in the microwave!
Technically speaking this is a skinny crustless quiche, but it’s become much lighter by eliminating the traditional crust.

Ingredients:
Olive oil
Onion
Package frozen chopped spinach defrosted and drained completely
Minced garlic
Salt and pepper to taste
Eggs
Skim milk (optional)
Crumbled feta cheese
How to make Weight Watchers Crustless Spinach, Onion and Feta Quiche:
Step 1. Preheat the oven to 350 degrees.
Step 2. Heat the oil in a skillet over medium high heat on the stove.
Step 3. Add the onions to the skillet, and saute until just becoming tender.
Step 4. Place the spinach that has been drained into the skillet and saute a few more minutes.
Step 5. Mix in the garlic and salt and pepper to taste.
Step 6. Line the bottom of a greased pie dish with the vegetable mixture.
Step 7. Add the skim milk to the beaten eggs at this time if you wish to use it.
Step 8. Pour the egg mixture over the vegetables in the pie dish.
Step 9. Sprinkle the feta cheese into the pie dish.
Step 10. Bake for 20-25 minutes, or until the egg is completely cooked through and set.

I’ve looked at several Weight Watchers recipes and they all tell how long to cook but never what temperature to cook at.

There are different package sizes for spinach, any one have an idea on what size to use?
