Medium onion chopped

Package frozen chopped spinach defrosted and drained completely

Minced garlic
Salt and pepper to taste

Skim milk

Crumbled feta cheese
Instructions
Preheat the oven to 350 degrees.
Heat the oil in a skillet over medium-high heat on the stove.
Add the onions to the skillet, and saute until just becoming tender.
Place the spinach that has been drained into the skillet and saute a few more minutes.
Mix in the garlic and salt and pepper to taste.
Line the bottom of a greased pie dish with the vegetable mixture.
Add the skim milk to the beaten eggs at this time if you wish to use it.
Pour the egg mixture over the vegetables in the pie dish.
Sprinkle the feta cheese into the pie dish.
Bake for 20-25 minutes, or until the egg is completely cooked through and set.
