Weight Watchers Crustless Spinach, Onion and Feta Quiche

Ingredients
  

  • 1 Tbsp. Olive oil
  • 1 Medium onion chopped
  • 1 Package frozen chopped spinach defrosted and drained completely
  • 2 tsp. Minced garlic
  • Salt and pepper to taste
  • 5 Eggs beaten
  • ¼ C. Skim milk optional
  • 3 oz. Crumbled feta cheese

Instructions
 

  • Preheat the oven to 350 degrees.
  • Heat the oil in a skillet over medium-high heat on the stove.
  • Add the onions to the skillet, and saute until just becoming tender.
  • Place the spinach that has been drained into the skillet and saute a few more minutes.
  • Mix in the garlic and salt and pepper to taste.
  • Line the bottom of a greased pie dish with the vegetable mixture.
  • Add the skim milk to the beaten eggs at this time if you wish to use it.
  • Pour the egg mixture over the vegetables in the pie dish.
  • Sprinkle the feta cheese into the pie dish.
  • Bake for 20-25 minutes, or until the egg is completely cooked through and set.
