Spaghetti is one of my favorite comfort foods, and what is spaghetti without meatballs? If you’re a vegetarian like me, you don’t have to miss out on meatball goodness! My mom has a fantastic recipe for vegetarian meatballs, and it’s one of my favorite meals. I think my mom gets tired of all the times I request it for Sabbath lunch!

Recipe: Mom’s Vegetarian Meatballs

Since I’m a super picky eater, it’s nice to have a tried and true recipe that I love on hand for nights when I’m really craving spaghetti and meatballs.

Ingredients:
1 C pecan meal
1 1/2 C bread crumbs
4 eggs
salt to taste
garlic salt and other spices to taste

Directions:
Mix all the ingredients together and mold into small balls. Fry slowly in oil until browned and cooked inside.
