Cole slaw (or slaw) is a staple in so many summer activities involving food. I love it with barbecues ribs, or as a topper to shredded pork. It’s just one of those dishes that says “summer is here”. Of course you can have it any time of the year, but for me I am reminded of those family get-togethers at the beach, celebrating by watching the fireworks, and eating corn on the cob in the lazy evening.
The recipe is surprisingly easy to make too – you can bring all of the ingredients with you to the party and make it fresh or make it ahead so that it’s ready for the crowds. But make sure to bring plenty because your friends and family will be asking for seconds.
Can this be made ahead?
ABSOLUTELY! That’s the best thing about this cole slaw recipe – make it ahead and pop it in the fridge (covered) so it will be ready to go when you are. You can make this 24 hours ahead of time. You can squeeze a little lemon juice on the top to keep it crisp and prevent browning.
Can I double the recipe?
You can double or even triple this recipe if you have a big crowd to feed. Just multiply the ingredients and make sure you have a big bowl.
What about leftovers?
You can have leftovers anytime – just use a sealed container and keep in the fridge! TIP: place plastic cling wrap as a seal before putting the snap top on your container. This will keep the air out and your cole slaw will last longer.
