Ingredients:
4 cups of Chopped Cabbage
2 tbsp Olive Oil
1 large Vidalia Onion (Chopped)
1 cups Baby Tomatoes (Sliced)
1 Orange Pepper (Chopped)
1 Red bell Pepper (Chopped)
1 Yellow Bell Pepper (Chopped)
3 Stalks of Celery (Chopped)
3 tsp Garlic (Minced)
3 cups Beef Broth
1 tbsp Tomato Paste
Pinch of salt and pepper
Fresh Thyme

Directions:
Step 1. Heat olive oil in a stock pan over medium high heat.
Step 2. Add onion, peppers, and tomatoes. Continue to cook on medium high for 6-7 minutes.
Step 3. Stir to combine the tomato paste, garlic, thyme, salt and pepper.
Step 4. Continue to cook for an additional minute before adding the broth. Add the chopped cabbage.
Step 5. Increase the heat until the soup comes to a boil. Once boiling reduce the heat to low.
Step 6. Allow this to simmer for 12-16 minutes. Serve and enjoy!.
