Ingredients
  

  • 4 cups of Chopped Cabbage
  • 2 tbsp Olive Oil
  • 1 large Vidalia Onion Chopped
  • 1 cups Baby Tomatoes Sliced
  • 1 Orange Pepper Chopped
  • 1 Red bell Pepper Chopped
  • 1 Yellow Bell Pepper Chopped
  • 3 Stalks of Celery Chopped
  • 3 tsp Garlic Minced
  • 3 cups Beef Broth
  • 1 tbsp Tomato Paste
  • Pinch of salt and pepper
  • Fresh Thyme

Instructions
 

  • Heat olive oil in a stock pan over medium high heat.
  • Add onion, peppers, and tomatoes. Continue to cook on medium high for 6-7 minutes.
  • Stir to combine the tomato paste, garlic, thyme, salt and pepper.
  • Continue to cook for an additional minute before adding the broth. Add the chopped cabbage.
  • Increase the heat until the soup comes to a boil. Once boiling reduce the heat to low.
  • Allow this to simmer for 12-16 minutes. Serve and enjoy!
