I love a little spice in the morning – these Sriracha Eggs are perfect! The recipe is also 6 Weight Watchers SmartPoints per serving (and totally filling!)
Ingredients
- 3 egg whites
- 1/2 tbsp coconut oil
- 1/2 tbsp peanut butter
- 1/2 tsp sriracha
- 2 sprigs chopped parsley (about a tablespoon chopped)
- chopped unsalted peanuts
- 1 diced tomato
Instructions
Whisk egg whites with chopped parsley, then pour into skillet on medium. When eggs are about half way done, throw in coconut oil, peanut butter, and sriracha, mix together until eggs are scrambled. Plate and top with tomato and peanuts.
