2 Sweet Potatoes (Medium Sized)

Olive Oil

Salt and Pepper to taste

Butter for Garnish

Instructions:

Step 1. Wash and dry the sweet potatoes well.

Step 2. Use a fork to pierce holes on all sides of the potatoes.

Step 3. Smooth some olive oil over the outside of the potatoes

Step 4. Sprinkle salt and pepper to taste on the outside of the sweet potatoes.

Step 5. Cook on a microwave safe plate for 5 minutes in the microwave.

Step 6. Test the sweet potatoes for softness, and continue to cook at 1-minute intervals until done to your liking.

Step 7. Serve garnished with butter and salt and pepper to taste.
