Two Ingredients. Yes two! All you need is a box of Spice cake mix and a can of pumpkin puree. Quick, easy, and tasty.
I just made these cupcakes today. Some I left plain, a few added raisins and some I added pecans pieces. I topped them off with cream cheese frosting. Yummy!! Easy!
Yields: 24 muffins | Prep Time: 5 minutes | Bake time: 20 minutes | Total Time: 25 minutes | 2 Freestyle Smartpoints
Ingredients:
1 box spice cake mix
1 15 oz can pumpkin puree
How to make 2 Ingredient Pumpkin Muffins:
Step 1. Preheat to 325 degrees.
Step 2. In a large bowl add your spice cake mix and pumpkin puree.
Step 3. Mix until combined, make sure to scrape sides.
Step 4. Line your cupcake pan with liner.
Step 5. Use a regular-sized ice cream scoop to scoop batter and drop into the liners.
Step 6. Bake for 20 minutes.
Step 7. Insert a toothpick into the center of the muffin, if it comes out clean muffins are done.
Step 8. If not, bake for another 2-3 minutes.

Just them to ingredients or also add the things on cake mix box. ( the pumpkin muffin)
Just those two ingredients. Sometimes I add 1/2 cup water to thin down the batter a little bit.

Please recheck your information. I put these into recipe builder and it comes out to 3 SP per muffin if you make 24 muffins.
As someone else said you can add a little water or 1/2c unsweetened applesauce to help moisten these and it doesn’t change the points valve. (To be clear again, 3 SP for 24 muffins on ww freestyle using receive builder.)
@Kendra, I also put this into the recipe builder and it came out 2 points. I used the item “Unprepared spice cake mix” which had it down for 1/10 of a box, and multiplied that by 10 for whole box (59 points) and the pumpkin puree for 0 points. It came out to 2 for 24 muffins.
@Tena, one serving of the spice cake mix is 9 points. The box has 10 servings. 10 servings comes up to 92 points for the whole cake box of mix. 24 cupcakes would be at least 3 points each–almost 4 points. Check your app for correct points.
I make these and add 2eggs and nonfat yogurt
We make this recipe and use the regular ice cream scoop. Only get 12 muffins. Not sure how you get 24.

These are 3.75 points each but they are pretty good
My grandsons and I love these muffins however about 50% of the time they don’t rise very much. They are below the edge of the paper cups and I can’t figure out why. Any suggestions?
