First up is this AMAZING Healthy Roasted Chicken and Veggies meal. I can’t say enough good things about this meal-in-one. I love it for lots of reasons. Most importantly it tastes SO good. This is loaded with all my favorite veggies. Broccoli, bell pepper, zucchini, tomatoes and red onion.

The hardest part about this pan is chopping up all the veggies lol Other than that there is really nothing to it. 🙂

Ingredients

Chicken breasts – You can use other cuts of chicken if you prefer.

Olive oil

Red onion

Bell peppers

Broccoli florets

Tomatoes

Oregano

Basil

Garlic powder

Paprika

Salt and pepper

How to make Healthy Roasted Chicken and Veggies

Step 1. Preheat the oven to 475 degrees.

Step 2. Place the vegetables and cut up chicken in a large bowl.

Step 3. Add the olive oil, oregano, basil, garlic powder, paprika and salt and pepper to taste. Mix well to coat and combine.

Step 4. Spread the chicken and veggies in an even layer on a large baking sheet. Bake for 15 minutes until the chicken is cooked through and the veggies are tender.

  • ½ Red onion chopped
  • 1 C. Bell peppers chopped
  • 2-3 C. Broccoli florets
  • ½ C. Tomatoes chopped into large pieces
  • ½ tsp. Oregano
  • ½ tsp. Basil
  • ½ tsp. Garlic powder
  • ¼ tsp. Paprika
  • Salt and pepper to taste
