- 2 Tbsp. Olive oil
- 1 lb. Chicken breasts cut into bite sized pieces
- ½ Red onion chopped
- 1 C. Bell peppers chopped
- 2-3 C. Broccoli florets
- ½ C. Tomatoes chopped into large pieces
- ½ tsp. Oregano
- ½ tsp. Basil
- ½ tsp. Garlic powder
- ¼ tsp. Paprika
- Salt and pepper to taste
Preheat the oven to 475 degrees.
Place the vegetables and cut up chicken in a large bowl.
Add the olive oil, oregano, basil, garlic powder, paprika and salt and pepper to taste. Mix well to coat and combine.
Spread the chicken and veggies in an even layer on a large baking sheet. Bake for 15 minutes until the chicken is cooked through and the veggies are tender.
