Ingredients
  

  • 2 Tbsp. Olive oil
  • 1 lb. Chicken breasts cut into bite sized pieces
  • ½ Red onion chopped
  • 1 C. Bell peppers chopped
  • 2-3 C. Broccoli florets
  • ½ C. Tomatoes chopped into large pieces
  • ½ tsp. Oregano
  • ½ tsp. Basil
  • ½ tsp. Garlic powder
  • ¼ tsp. Paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 475 degrees.
  • Place the vegetables and cut up chicken in a large bowl.
  • Add the olive oil, oregano, basil, garlic powder, paprika and salt and pepper to taste. Mix well to coat and combine.
  • Spread the chicken and veggies in an even layer on a large baking sheet. Bake for 15 minutes until the chicken is cooked through and the veggies are tender.
