Ingredients:

2 Medium Skinless/Boneless Chicken Breasts (Chopped)

1 cup Red Bell Pepper

½ Onion (Chopped)

1 Zucchini (Chopped)

1 cup Broccoli Florets

½ cup Plum Tomatoes (Chopped)

2 tbsp Olive Oil

½ tsp Salt

½ tsp Black Pepper

1 tsp Italian Seasoning

¼ tsp Paprika

Directions:

Step 1. Preheat oven to 500 degrees.

Step 2. Prep a medium roasting pan with nonstick baking spray.

Step 3. Add olive oil, salt, pepper, Italian seasonings, and paprika in a small bowl. Stir to blend.

Step 4. Add the chopped chicken and veggies in a roasting pan.

Step 5. Pour the oil and seasoning mixture over the chicken and veggies.

Step 6. Stir to cover the chicken and veggies with the olive oil mixture. Bake at 500 degrees for 15 minutes.

Step 7. Check to see that the veggies are charred and the chicken is cooked. If not, return to the oven.

Step 8. If the chicken and veggies are cooked, plate and serve.
