Weight Watcher Friendly Turkey & Kale Meatballs (or "how I Got My Family To Eat Kale")

Why is it my family wants nothing to do with healthy good-for-you foods, like kale (with the exception of my daughter)? I am always trying to hide greens in dishes that they will love. Through my mixing and matching I developed an amazing recipe for Turkey Meatballs – so healthy that you will want to do jumping jacks after you eat them! Even my husband (who hates anything green) ate them up like they were candy! Here’s how to make them!

Turkey Kale Meatballs

Ingredients

  • 2 lb Ground Turkey
  • 1 cup chopped fresh spinach
  • 1 clove garlic
  • 3 green onions (scallions) finely  chopped (do not use the white or dark green parts)
  • Salt/Pepper
  • 2 tbs olive oil

Instructions

Heat skillet on med-high and drizzle olive oil into pan. Mix together with hands all ingredients above in a large bowl. Form balls about 1/2-1 inch in diameter. Drop into hot skillet and move around until browned on all sides. Lower heat to low/med and cover pan for 10 minutes. Serve with marinara or light ranch dressing. Serves 4
