Ingredients:

Salad:

3 cup Cooked Chicken (Cooled) – 0points

1 Head Romaine Lettuce

1 cup Cherry Tomatoes

1 English Seedless Cucumber

1 can Corn

5 Green Onions

1 can (15 oz) Black Beans

½ cup Shredded Sharp Colby Jack Cheese

¼ cup Fresh Cilantro

½ Fresh Lime

Garnish:

½ cup Tortilla Strips Salad Topping

Extra Cilantro

Dressing:

1 cup fat free Ranch Dressing (Lo-Fat)

1 packet (1 oz) Taco Seasoning (2 Tbsp)

Directions:

Step 1. Dice chicken.

Step 2. Chop Romaine lettuce. Slice cherry tomatoes in half. Slice the cucumber.

Step 3. Drain the can of corn. Slice the green onions. Drain and rinse the black beans.

Step 4. Chop the cilantro. Juice one half lime.

Salad:

Step 1. Add salad ingredients in a large bowl. (Reserve the lime juice.)

Step 2. Toss well. Drizzle lime juice over the salad.

Step 3. Cover and chill.

Dressing:

Step 1. Whisk together the ranch dressing and taco seasoning.

Salad:

Step 1. Pour the dressing over the salad a little at a time.

Step 2. Toss the salad.

Step 3. Garnish with tortilla strips and chopped fresh cilantro .

Step 4. Serve.
