These taco salad bowls are my go-to recipe for a quick WW lunch. It’s packed with flavor and protein to keep you full for a long time.

Skinny Taco Salad

Prep Time: 20 minutes | Cook Time: 5-10 minutes

Ingredients:

1 Bag shredded lettuce (0points)

1 lb. Ground beef (12points)

1 Onion chopped (0points)

1 Packet taco seasoning (I used Reduced sodium taco seasoning, 3points)

1 Cucumber chopped (0points)

1 Tomato chopped (0points)

1 C. Shredded cheese (17points)

Sour cream or salsa for garnish

How to make Taco Salad:

Step 1. Place the ground beef and onion in a skillet over medium-high heat on the stove. Cook until the ground beef is browned completely and the onions have softened.

Step 2. Drain any excess grease.

Step 3. Stir in the taco seasoning and saute for a few more minutes. Allow the meat mixture to cool a bit.

Step 4. Place some shredded lettuce in serving bowls.

Step 5. Top with some of the meat mixture, chopped tomatoes, and cucumbers.

Step 6. Add shredded cheese and salsa or sour cream for garnish.
