Rainbow Cheesecake Shooters

Recipe: Rainbow Cheesecake Shooters

Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 2 tbs sugar
  • 5 tbs salted butter, melted
  • 6 plastic dessert shooters

Cheesecake ingredients

  • 2 packages cream cheese, room temperature
  • 1 14-ounce can (1 1/4 cups) sweetened condensed milk
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • OR you can use a premade cheesecake mix
  • food coloring - blue, pink, purple, golden yellow
  • 4 disposable pasrty bags or zip bags 

Whipped Cream Ingredients

  • 1 cup heavy cream
  • 3  tbs powdered sugar
  • 2 Tbsp sugar
  • 1/2 teaspoon vanilla

Toppings

  • Rainbow sprinkles
  • Marshmallows from Lucky Charms cereal

Instructions

Crust Directions:

  1. Combine all ingredients into a bowl and mix until combined.
  2. Scoop a tablespoon of the crust and put it on the bottom of the shooters.

Cheesecake Directions:

  1. Beat cream cheese until smooth
  2. slowly add condensed milk until combined
  3. mix in vanilla and lemon juice
  4. Split the cheesecake filling into 4 bowls
  5. Add 1 color to each of the 4 bowls, stir to combine
  6. Scoop each of the cheesecake filling into a disposable pastry bag one color in each bag.
  7. Cut the pastry bag tip
  8. Twist the top of the bag so you can easily pipe the cheesecake not the shooter
  9. Begin to add the cheesecake one color at a time

Add the next colors in layers

Topping Directions

  1. Place mixing bowl and beater in the freezer to chill for about 5-10 minutes
  2. Add all the ingredients into the chilled bowl.
  3. Beat the ingredients on medium speed until the whipped cream holds soft peaks.
  4. Scoop whipping cream into a pastry bag with a large star tip.
  5. Twist the open end of the pastry bag to push the whipping cream to the tip.
  6. Pipe a dollop on top
  7. Sprinkle toppings and enjoy!
