Ingredients:
2-3 cup Chicken (Shredded)
1 ½ cup Mozzarella Cheese (Shredded)
4 oz. Cream Cheese (Softened)
½ cup Buffalo wing sauce
2 Large zucchini
Instructions:
Step 1. Heat the oven to 400 degrees.
Step 2. Cut each zucchini into two pieces lengthwise.
Step 3. Use a spoon to scoop the center out of each piece.
Step 4. In a bowl, combine the chicken, wing sauce, cream cheese and ½ cup of the shredded mozzarella.
Step 5. Stuff the zucchini with the chicken mixture, and sprinkle with the remaining cheese.
Step 6. Bake for 20 minutes, and garnish with green onions before serving.
