- 2-3 cup Chicken Shredded
- 1 ½ cup Mozzarella Cheese Shredded
- 4 oz. Cream Cheese Softened
- ½ cup Buffalo Wing Sauce
- 2 Large Zucchini
Heat the oven to 400 degrees.
Cut each zucchini into two pieces lengthwise.
Use a spoon to scoop the center out of each piece.
In a bowl, combine the chicken, wing sauce, cream cheese and ½ cup of the shredded mozzarella.
Stuff the zucchini with the chicken mixture, and sprinkle with the remaining cheese.
Bake for 20 minutes, and garnish with green onions before serving.
