Ingredients:

1 ½ lbs. Baby Red Potatoes

1 ½ lbs. Baby Golden Potatoes

2 tbsp Olive Oil

1 ½ tsp Garlic (Minced)

1 tsp Thyme (Dried)

½ tsp Oregano (Dried)

½ tsp Basil (Dried)

â…“ cup Parmesan (Shredded)

Kosher Salt/ Black Pepper to Taste

2 tbsp Unsalted Butter

2 tbsp Chopped Fresh Parsley Leaves

Directions:

Step 1. Preheat oven to 400 degrees. Line a baking sheet with nonstick baking spray.

Step 2. Chop both baby red and golden potatoes in half. Set aside.

Step 3. Toss both the baby red and golden potatoes in a large bowl.

Step 4. In a second bowl stir together the olive oil, garlic, thyme,oregano, basil and parmesan. Drizzle this over the potatoes.

Step 5. Season with salt and pepper. Toss.

Step 6. Flip the bowl of potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up.

Step 7. Bake at 400 degrees for 15 minutes.

Step 8. Remove from the oven and flip the potatoes so that the skin side is facing down.

Step 9. Return the potatoes to the oven at 400 degrees for an additional 15 minutes.

Step 10. Put the butter in a microwave-safe bowl. Put the bowl in a microwave and heat for about 30 seconds.

Step 11. If the butter has melted, return the bowl to the microwave for another 30 seconds,

Step 12. Once the butter has melted, drizzle it over the potatoes. Garnish with chopped parsley.
