How to make Sheet Pan Quesadillas:

Step 1. First, preheat the oven to 425 F or 220 C degrees. 

Step 2. Warm the olive oil in a nonstick frying pan over medium heat. 

Step 3. Stir in the diced onions and bell peppers and cook for about 5 minutes. Remove from the skillet and set aside. 

Step 4. In the same skillet, add the ground beef and cook for about 5 minutes until no longer pink in color. 

Step 5. Stir in the paprika powder, chili powder, cumin and season with salt and pepper to taste. 

Step 6. Place six tortillas on a baking sheet lined with a piece of parchment paper. 

Step 7. Top with the ground beef mixture and add the peppers and onions. Sprinkle the grated cheese on top and spring onions as well. 

Step 8. Fold the tortillas towards the center and place another tortilla in the center to cover everything up. 

Step 9. Bake until tortillas are beginning to turn crispy and golden brown in color. It will take around 25 minutes. 

Step 10. Serve with sour cream and some spring onions as well if desired.

Can you make it ahead?

Yes, you can make it up to 2 days in advance. Warm them well before serving.
