Ingredients:

3 Large Zucchini cut in half lengthwise

1 tbsp. Olive Oil

½ tsp. Garlic Powder

½ tsp. Italian Seasoning

1 tbsp. Olive Oil

1 lb. Beef (Ground)

¼ cup. Parsley (Chopped)

2 tsp. Garlic (Minced)

1 Large Egg

1 cup Mozzarella Cheese (Shredded)

2 cup Marinara Sauce

½ cup Parmesan Cheese Grated

Salt and Pepper to Taste

Instructions:

Step 1. In a mixing bowl, knead together the ground beef, egg, parsley, minced garlic and salt and pepper to taste. Heat the oven to 350 degrees.

Step 2. Hollow out the center of each zucchini half to form a boat.

Step 3. Place the zucchini boats in a 9×13 baking dish, drizzle with the olive oil and season with the garlic powder, Italian seasoning and salt and pepper to taste.

Step 4. Bake the zucchini for 12 minutes.

Step 5. While the zucchini is baking, add the olive oil to a skillet over medium high heat.

Step 6. Form the meat mixture into 20-24 balls, and cook for 2 minutes per side until brown.

Step 7. Reduce the heat to medium and pour in the marinara. Saute for 10 more minutes in the sauce.

Step 8. Top the cooked zucchini boats with the sauce and meatballs.

Step 9. Sprinkle with the mozzarella cheese.

Step 10. Turn the oven to broil on high.
