  • Sweet Cream Butter
  • Granulated Sugar
  • Eggs Large
  • Whole Milk
  • All-Purpose Flour
  • Baking Powder
  • Salt
  • Lemon
  • Blueberries Divide 1 Tbsp Flour

Glaze:

  • Powdered sugar
  • Fresh lemon juice remaining

How to make Lemon Blueberry Loaf:

Step 1. First, preheat your oven to 350 F or 180 C degrees. 

Step 2. Line a 9×5 inch loaf tin with a baking tray and spray with cooking spray. 

Step 3. To make the loaf, whisk the butter and sugar in a large bowl until creamy and delicious. 

Step 4. Stir in the eggs and milk and mix until combined. 

Step 5. Stir in lemon juice and add the flour, baking powder, salt, and lemon zest. 

Step 6. Mix until just combined. 

Step 7. Toss the blueberries with the flour in a bowl so they are all coated well. 

Step 8. Using a slotted spoon take the berries and fold them in the batter. 

Step 9. Transfer the batter to the prepared pan and bake for 50 minutes. 

Step 10. Mix all the ingredients for the glaze and pour all over the baked loaf. 

Step 11. Let it cool down and serve to enjoy.

Can you make it ahead?

Yes, you can make this loaf ahead of time and freeze it for up to three months. Just thaw it before serving and sprinkle some icing sugar on top. 

Storage instructions:

Store in the refrigerator for 3-4 days in an airtight container or ziplock bag. 

You can also freeze it for up to 3 months.
