In my quest to eat better I have been trying to incorporate greens and more protein into my diet. Spinach is an excellent source of iron and other nutrients your body needs – especially when you are on a health regimen. I use spinach in place of salad greens for just about everything.
Here’s a super easy and VERY healthy dinner to try! I have been making this for years now – it’s so fresh and tastes amazing! Its also a perfect dish to use some leftover chicken with. Plus it’s only 4 Weight Watcher points!

Crock Pot Chicken Salad
Ingredients:
- 2lbs chicken breast
- 2 tbs olive oil
- salt & pepper to taste
- 1 garlic clove
- fresh baby spinach
- cherry tomatoes
- 1 tbs fat-free ranch dressing
cook chicken breast, olive oil, garlic clove, salt & pepper in a crock pot (4hrs on high or 7 hours on low). Shred with two forks and place on a bed of spinach. top with sliced cherry tomatoes and fat-free ranch dressing.
Also DELISH on a tortilla! This will add 2 points to the total 🙂
