I love to bake and, while I may burn the bottoms of my cookies, my cakes and cupcakes always turn out fabulously moist. Although I love to make cakes, cupcakes are my favorite desserts to bake because they are much easier to both bake and decorate. And, I love coming up with different flavors.
The most recent one I made was a Reese’s Peanut Butter Cupcake, and BOY was it good! I used a cake mix for the cupcake but made my own peanut butter frosting. I seriously could not believe how easy and YUMMY that frosting was. I couldn’t stop eating it out of the bowl!
After making up the cake mix, I put a mini Reese’s peanut butter cup in the middle. Tip: freeze the peanut butter cups to prevent them from melting in the oven. This is out it looks when it comes out of the oven:
Seriously, how amazing does that look?? Chocolate and peanut butter is my favorite combination. I got the frosting recipe from All Recipes but changed it to use less sugar. It was still a little too sugary, though, so I think I will cut the amount of sugar down even more next time.
Reese's Peanut Butter Cupcakes
Ingredients
- 1/2 C butter
- 1 C peanut butter
- 2 C confectioners sugar Next time, I'd probably only use 1.5 C, though.
- Heavy whipping cream as needed
- Chocolate Cupcakes unfrosted
Instructions
- Beat butter and peanut butter together until light and fluffy.
- Slowly add in 1 C confectioners sugar. Add whipping cream until it reaches the consistency you desire.
- Slowly add in the rest of the confectioners sugar, and then add in more whipping cream until it reaches your desired consistency.
- Use a piping tip to fill a chocolate cupcake by pushing the tip into the top of the cupcake and gently squeezing to fill.
- Add some to the top of the cupcake and sprinkle with Peanut Butter Cup crumbles.
Now, I think I need to whip up another batch!

These look similar to some cupcakes I made but instead of Reese’s inside, they had a peanut butter-chocolate filling, and Reese’s on top!
