Ingredients
  

  • 1 ½ lbs. Ground beef
  • 1 C. Chopped onion
  • 1 Can diced tomatoes 15 oz.
  • 1 Packet of taco seasoning
  • 1 Can sweet whole kernel corn
  • 5 Flour tortillas low carb
  • 1 ½ C. Low fat shredded cheddar cheese
  • Chopped green onions for garnish

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cook the meat and onions over medium-high heat in a deep sided skillet until the meat is completely browned and the onions have begun to soften.
  • Drain any excess grease from the meat.
  • Add the diced tomatoes and drained can of corn to the skillet, and saute for 4-5 minutes.
  • Place a thin layer of the meat mixture into the bottom of a well greased pie or casserole dish.
  • Top the meat mixture with two flour tortillas.
  • Add another layer of meat mixture and top with ½ cup of the cheese.
  • Place 3 flour tortillas on top.
  • Add the remaining meat mixture, and bake for 20 minutes.
  • Remove from the oven, top with the last cup of cheese, and bake for another 10 minutes.
  • Let rest a few minutes before serving topped with freshly chopped green onions.
