Spinach, Avocado and Egg Whites on Toast

- 2 egg whites
- 1/2 cup spinach
- 1 avocado mashed
- 1 slice tomato
- 1 slices bread
- small handful shredded cheese
- 1/2 tsp coconut oil
Toast the bread and spread mashed avocado over slice, then add tomato.
Add coconut oil to a small skillet over medium heat, then add spinach until wilted.
Mix egg whites and cheese together and scramble over medium heat with spinach.
Place on top of tomato/avocado toast and enjoy!
