Spinach, Avocado and Egg Whites on Toast

Ingredients
  

  • 2 egg whites
  • 1/2 cup spinach
  • 1 avocado mashed
  • 1 slice tomato
  • 1 slices bread
  • small handful shredded cheese
  • 1/2 tsp coconut oil

Instructions
 

  • Toast the bread and spread mashed avocado over slice, then add tomato.
  • Add coconut oil to a small skillet over medium heat, then add spinach until wilted.
  • Mix egg whites and cheese together and scramble over medium heat with spinach.
  • Place on top of tomato/avocado toast and enjoy!
