Meatball Zucchini Boats

Ingredients
  

  • 3 Large Zucchini cut in half lengthwise
  • 1 tbsp. Olive Oil
  • ½ tsp. Garlic Powder
  • ½ tsp. Italian Seasoning
  • 1 tbsp. Olive Oil
  • 1 lb. Beef Ground
  • ¼ cup. Parsley Chopped
  • 2 tsp. Garlic Minced
  • 1 Large Egg
  • 1 cup Mozzarella Cheese Shredded
  • 2 cup Marinara Sauce
  • ½ cup Parmesan Cheese Grated
  • Salt and Pepper to Taste

Instructions
 

  • In a mixing bowl, knead together the ground beef, egg, parsley, minced garlic and salt and pepper to taste. Heat the oven to 350 degrees.
  • Hollow out the center of each zucchini half to form a boat.
  • Place the zucchini boats in a 9x13 baking dish, drizzle with the olive oil and season with the garlic powder, Italian seasoning and salt and pepper to taste.
  • Bake the zucchini for 12 minutes.
  • While the zucchini is baking, add the olive oil to a skillet over medium high heat.
  • Form the meat mixture into 20-24 balls, and cook for 2 minutes per side until brown.
  • Reduce the heat to medium and pour in the marinara. Saute for 10 more minutes in the sauce.
  • Top the cooked zucchini boats with the sauce and meatballs.
  • Sprinkle with the mozzarella cheese.
  • Turn the oven to broil on high.
  • Broil until the cheese is melted, and top with the parmesan before serving.
