In a mixing bowl, combine the eggs, egg whites, garlic powder, Italian seasoning and salt and pepper to taste. Blend on high until fluffy and well combined.
Layer the vegetables in the bottom of a well greased 9x13 baking dish.
Pour the egg mixture over the vegetables in the baking dish.
Bake for 20-25 minutes until the egg is cooked through.
While the eggs are baking, toast the English muffins to your liking, and prepare the sausage patties according to the package instructions.
Cut the cooked egg mixture into 12 even pieces.
Layer the slice of egg, a slice of cheese and a sausage patty on each English muffin. Refrigerate or freeze any leftover sandwiches, and eat them as needed.
