Make Ahead Weight Watchers Breakfast Sandwiches

Ingredients
  

  • 12 Light English muffins
  • 12 Slices of American cheese low fat
  • 12 Sausage patties morningstar patties
  • 7 Large eggs
  • ½ C. Egg whites
  • ½ Medium onion chopped
  • ½ C. Orange bell pepper chopped
  • 1-2 C. Chopped raw broccoli
  • ½ tsp. Garlic powder
  • 1 tsp. Italian seasoning. Salt and pepper to taste

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, combine the eggs, egg whites, garlic powder, Italian seasoning and salt and pepper to taste. Blend on high until fluffy and well combined.
  • Layer the vegetables in the bottom of a well greased 9x13 baking dish.
  • Pour the egg mixture over the vegetables in the baking dish.
  • Bake for 20-25 minutes until the egg is cooked through.
  • While the eggs are baking, toast the English muffins to your liking, and prepare the sausage patties according to the package instructions.
  • Cut the cooked egg mixture into 12 even pieces.
  • Layer the slice of egg, a slice of cheese and a sausage patty on each English muffin. Refrigerate or freeze any leftover sandwiches, and eat them as needed.
