German Fried Potato Pancakes

Ingredients
  

  • 2 Russet Potatoes
  • 1 ½ cup All Purpose Flour
  • 2 Large Eggs
  • Pinch of Nutmeg
  • 2 tbsp. Butter
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Peel and cut the potatoes into bite sized pieces. Boil in water until the potatoes are tender.
  • Mash the potatoes well with 2 Tbsp. of butter.
  • Add the cooled potatoes to a mixing bowl with the eggs, flour, nutmeg and salt and pepper to taste.
  • Form the dough into 12 even pieces.
  • Heat the oil in a skillet over medium high heat.
  • Fry the potato pancakes until golden brown and crispy.
  • Drain on a paper towel lined plate before serving.
