- Preheat oven to 400 degrees. Line a baking sheet with nonstick baking spray. 
- Chop both baby red and golden potatoes in half. Set aside. 
- Toss both the baby red and golden potatoes in a large bowl. 
- In a second bowl stir together the olive oil, garlic, thyme, oregano, basil, and parmesan. Drizzle this over the potatoes. 
- Season with salt and pepper. Toss. 
- Flip the bowl of potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up. 
- Bake at 400 degrees for 15 minutes. 
- Remove from the oven and flip the potatoes so that the skin side is facing down. 
- Return the potatoes to the oven at 400 degrees for an additional 15 minutes. 
- Put the butter in a microwave-safe bowl. Put the bowl in a microwave and heat for about 30 seconds. 
- If the butter has melted, return the bowl to the microwave for another 30 seconds, 
- Once the butter has melted, drizzle it over the potatoes. Garnish with chopped parsley.
