Garlic Parmesan Roasted Potatoes

Ingredients
  

  • 1 ½ lbs. Baby Red Potatoes
  • 1 ½ lbs. Baby Golden Potatoes
  • 2 tbsp Olive Oil
  • 1 ½ tsp Garlic Minced
  • 1 tsp Thyme Dried
  • ½ tsp Oregano Dried
  • ½ tsp Basil Dried
  • cup Parmesan Shredded
  • Kosher Salt/ Black Pepper to Taste
  • 2 tbsp Unsalted Butter
  • 2 tbsp Chopped Fresh Parsley Leaves

Instructions
 

  • Preheat oven to 400 degrees. Line a baking sheet with nonstick baking spray.
  • Chop both baby red and golden potatoes in half. Set aside.
  • Toss both the baby red and golden potatoes in a large bowl.
  • In a second bowl stir together the olive oil, garlic, thyme, oregano, basil, and parmesan. Drizzle this over the potatoes.
  • Season with salt and pepper. Toss.
  • Flip the bowl of potatoes onto the prepared baking sheet. Arrange the potatoes in a single layer with the skin side up.
  • Bake at 400 degrees for 15 minutes.
  • Remove from the oven and flip the potatoes so that the skin side is facing down.
  • Return the potatoes to the oven at 400 degrees for an additional 15 minutes.
  • Put the butter in a microwave-safe bowl. Put the bowl in a microwave and heat for about 30 seconds.
  • If the butter has melted, return the bowl to the microwave for another 30 seconds,
  • Once the butter has melted, drizzle it over the potatoes. Garnish with chopped parsley.
  • Enjoy!
