Ingredients
  

  • 2 Cucumbers peeled and sliced
  • 3 Plum tomatoes chopped
  • 1 Onion sliced into rings
  • β…“ C. White vinegar
  • ΒΌ C. Oil
  • 3 Tbsp. Granulated sugar Sweet N Low Granulated Sugar Substitute = 0points
  • β…” C. Water
  • Salt and pepper to taste

Instructions
 

  • Chop the vegetables, and place them into a mixing bowl.
  • In a small bowl, combine the vinegar, oil, water, sugar and salt and pepper to taste.
  • Pour the vinegar mixture over the vegetables, and toss to coat.
  • Refrigerate the mixture for a minimum of 2-3 hours before serving.
