First, preheat your oven to 350 F or 180 C degrees. Prep a 9x13-inch baking dish with cooking spray.
Cook the pasta according to the package instructions.
In a nonstick frying pan, cook the ground beef, onion, and garlic over medium heat.
Stir in the tomato sauce, fire-roasted tomatoes, and seasonings.
Mix until combined and cook for 5 minutes more.
Transfer this to a large mixing bowl and stir in one cup of shredded cheese and 16 pieces of pepperoni slices. Mix well and transfer into the prepared baking dish.
Sprinkle with the rest of the pepperoni slices and top with grated cheese.
Bake for about 20 minutes covered with a piece of aluminum foil, and then remove the foil and cook for 15 minutes more.
