Hamburger Soup

THIS IS A HAMBURGER SOUP! This is great made ahead of time, reheats well and freezes perfectly!

Ingredients
  

  • 1 ½ lbs. Ground beef
  • 5 Small red potatoes diced
  • 1 Onion chopped
  • 2 tsp. Minced garlic
  • 28 oz. Crushed tomatoes
  • 1 Can Tomato soup
  • 2 C. Beef broth
  • ½ tsp. Oregano
  • ½ tsp. Basil
  • 3 tsp. Worcestershire sauce
  • Salt and pepper to taste

Instructions
 

  • Place the ground beef and onions into a large pot or deep sided skillet on the stove over medium-high heat. Continue to saute until the meat is completely browned and the onions are beginning to soften.
  • Drain any extra grease.
  • Add the minced garlic, oregano and basil to the skillet, and saute for 30 seconds longer.
  • Place the potatoes, crushed tomatoes, tomato soup, worcestershire sauce and beef broth into the skillet along with salt and pepper to taste. Stir to combine.
  • Put a lid on the pot or skillet, and cook for 20-30 minutes until the potatoes are tender.
  • Garnish with freshly chopped parsley before serving if desired.
