Cookies:
- 2 tbsp. Butter
- 8 oz. Semi sweet chocolate chips
- ½ cup Sugar
- 1 tsp. Vanilla extract
- 2 Large eggs
- ¼ tsp. Baking powder
- ½ cup All purpose flour
Topping:
- 8 Tbsp. Butter
- 2 Egg yolks
- 1 cup Evaporated milk
- 1 cup Sugar
- 1 tsp. Vanilla extract
- 1 cup Coconut Shredded
- 1 cup Pecans Chopped
- Melted chocolate for drizzling
- Heat the oven to 350 degrees. 
- Melt the butter in chocolate chips in a microwave safe bowl by heating at 30 seconds intervals in the microwave until smooth. 
- Mix together the eggs, ½ cup sugar and 1 tsp vanilla extract. 
- Add the cooled chocolate to the egg mixture and stir to combine. 
- Mix the flour and baking powder into the chocolate mixture and stop by the teaspoon onto a baking sheet lined with parchment paper. Bake for 10 minutes. 
- While the cookies are baking, add the butter, egg yolks, 1 cup sugar and 1 cup evaporated milk to a pot over medium heat. Stir the mixture and heat until thickened. 
- Remove the mixture from the heat and stir in the coconut, pecans and vanilla. 
- Top each cookie with some of the topping mixture, and allow to chill for 30 minutes. 
- Drizzle the cookies with melted chocolate and chill 15 minutes longer before serving.
