German Chocolate Brownie Cookies

Ingredients
  

Cookies:

  • 2 tbsp. Butter
  • 8 oz. Semi sweet chocolate chips
  • ½ cup Sugar
  • 1 tsp. Vanilla extract
  • 2 Large eggs
  • ¼ tsp. Baking powder
  • ½ cup All purpose flour

Topping:

  • 8 Tbsp. Butter
  • 2 Egg yolks
  • 1 cup Evaporated milk
  • 1 cup Sugar
  • 1 tsp. Vanilla extract
  • 1 cup Coconut Shredded
  • 1 cup Pecans Chopped
  • Melted chocolate for drizzling

Instructions
 

  • Heat the oven to 350 degrees.
  • Melt the butter in chocolate chips in a microwave safe bowl by heating at 30 seconds intervals in the microwave until smooth.
  • Mix together the eggs, ½ cup sugar and 1 tsp vanilla extract.
  • Add the cooled chocolate to the egg mixture and stir to combine.
  • Mix the flour and baking powder into the chocolate mixture and stop by the teaspoon onto a baking sheet lined with parchment paper. Bake for 10 minutes.
  • While the cookies are baking, add the butter, egg yolks, 1 cup sugar and 1 cup evaporated milk to a pot over medium heat. Stir the mixture and heat until thickened.
  • Remove the mixture from the heat and stir in the coconut, pecans and vanilla.
  • Top each cookie with some of the topping mixture, and allow to chill for 30 minutes.
  • Drizzle the cookies with melted chocolate and chill 15 minutes longer before serving.
