Add olive oil to a wok on the stovetop on medium heat.
Stir in the chopped onions, saute for 1-2 minutes.
Add minced garlic, ginger paste, stirring to cook. Stir in the ground chicken.
Allow the mixture to continue to cook.
With a wooden spoon, break up the ground chicken. Continue to cook until the ground chicken has browned.
Transfer everything that is in the wok to a bowl. Set aside.
Add the shredded cabbage to the wok, cooking until it is wilted and tender (or 4-5 minutes).
Stir the ground chicken back into the wok.
Whisk to combine soy sauce, sesame oil, vinegar, and Sirach sauce. Stir to mix.
Stir in a pinch of salt and pepper.
