Lemon Blueberry Loaf
This is one of the recipes you fall in love with after you try the first bite. It’s so delicious, soft and perfect that I am sure you will make it with blueberries, lemon, and every combination possible. The recipe is so simple that you won’t need any hand or stand mixer.
- ½ cup Sweet Cream Butter
- ¾ cup Granulated Sugar
- 2 Eggs Large
- ½ cup Whole Milk
- 1 ½ cups All-Purpose Flour
- 1 tsp Baking Powder
- ½ tsp Salt
- 1 Fresh Lemon
- 1 ¼ cups Fresh Blueberries Divide 1 Tbsp Flour
Glaze:
- ¼ cup powdered sugar
- Fresh lemon juice remaining
- How to make Lemon Blueberry Loaf:
First, preheat your oven to 350 F or 180 C degrees.
Line a 9x5 inch loaf tin with a baking tray and spray with cooking spray.
To make the loaf, whisk the butter and sugar in a large bowl until creamy and delicious.
Stir in the eggs and milk and mix until combined.
Stir in lemon juice and add the flour, baking powder, salt and lemon zest.
Mix until just combined.
Toss the blueberries with the flour in a bowl so they are all coated well.
Using a slotted spoon take the berries and fold them in the batter.
Transfer the batter to the prepared pan and bake for 50 minutes.
Mix all the ingredients for the glaze and pour all over the baked loaf.
Let it cool down and serve to enjoy.
