Lemon Blueberry Loaf

This is one of the recipes you fall in love with after you try the first bite. It’s so delicious, soft and perfect that I am sure you will make it with blueberries, lemon, and every combination possible. The recipe is so simple that you won’t need any hand or stand mixer.

Ingredients
  

  • ½ cup Sweet Cream Butter
  • ¾ cup Granulated Sugar
  • 2 Eggs Large
  • ½ cup Whole Milk
  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 Fresh Lemon
  • 1 ¼ cups Fresh Blueberries Divide 1 Tbsp Flour

Glaze:

  • ¼ cup powdered sugar
  • Fresh lemon juice remaining
  • How to make Lemon Blueberry Loaf:

Instructions
 

  • First, preheat your oven to 350 F or 180 C degrees.
  • Line a 9x5 inch loaf tin with a baking tray and spray with cooking spray.
  • To make the loaf, whisk the butter and sugar in a large bowl until creamy and delicious.
  • Stir in the eggs and milk and mix until combined.
  • Stir in lemon juice and add the flour, baking powder, salt and lemon zest.
  • Mix until just combined.
  • Toss the blueberries with the flour in a bowl so they are all coated well.
  • Using a slotted spoon take the berries and fold them in the batter.
  • Transfer the batter to the prepared pan and bake for 50 minutes.
  • Mix all the ingredients for the glaze and pour all over the baked loaf.
  • Let it cool down and serve to enjoy.
