Mini Meatloaf Muffins

You will love individual mini meatloaf servings because everyone can enjoy a piece of mini meatloaf in front of their plate. They are presentative and also scrumptious.

Ingredients
  

  • 1 ½ lbs. Ground beef
  • ½ C. Chopped onion
  • ½ C. Chopped bell pepper
  • 2 tsp. Worcestershire sauce
  • 2 Tbsp. Chopped fresh parsley
  • 1 tsp. Dijon mustard
  • ¼ C. Bbq sauce
  • C. Bread crumbs
  • 1 tsp. Italian seasoning
  • 1 tsp. Garlic powder
  • 1 Large egg
  • Salt and pepper to taste

For the glaze:

  • ¼ C. BBQ sauce
  • ¼ C. Ketchup
  • 1 Tbsp. Honey

Instructions
 

  • First, preheat your oven to 350 F or 180 C degrees and grease a muffin tin with cooking spray or butter.
  • In a large mixing bowl, add all the ingredients for the meatloaf and mix until well combined.
  • Place the mixture evenly into the well-prepared muffin tin and set aside.
  • Mix the ingredients for the glaze in a small bowl and top each muffin with the prepared glaze.
  • Bake for about 25 minutes until well browned and cooked through.
