Mini Meatloaf Muffins
You will love individual mini meatloaf servings because everyone can enjoy a piece of mini meatloaf in front of their plate. They are presentative and also scrumptious.

- 1 ½ lbs. Ground beef
- ½ C. Chopped onion
- ½ C. Chopped bell pepper
- 2 tsp. Worcestershire sauce
- 2 Tbsp. Chopped fresh parsley
- 1 tsp. Dijon mustard
- ¼ C. Bbq sauce
- ⅔ C. Bread crumbs
- 1 tsp. Italian seasoning
- 1 tsp. Garlic powder
- 1 Large egg
- Salt and pepper to taste
For the glaze:
- ¼ C. BBQ sauce
- ¼ C. Ketchup
- 1 Tbsp. Honey
First, preheat your oven to 350 F or 180 C degrees and grease a muffin tin with cooking spray or butter.
In a large mixing bowl, add all the ingredients for the meatloaf and mix until well combined.
Place the mixture evenly into the well-prepared muffin tin and set aside.
Mix the ingredients for the glaze in a small bowl and top each muffin with the prepared glaze.
Bake for about 25 minutes until well browned and cooked through.
